Growing up Italian means you get to eat homemade gnocchi. Like a lot! No complaints here. Sometimes I cheat with a store bought version, in the interest of saving time. I know my ancestors are shaking their heads at me. BUT!! These are REALLY, REALLY good! Especially when accompanied by an incredibly easy to make bechamel sauce. So today I have for you vegan gnocchi with homemade bechamel sauce. A super easy recipe, that really delivers on flavour!
I found these gluten free gnocchi at the supermarket, and was very excited to try them. So glad I did! They have other flavours too! Next time, I’ll have to try another flavour. And no, I’m not being compensated in any way to endorse this product. It’s just really, really yummy!
What is bechamel sauce?
Bechamel sauce is a traditional french white sauce that starts with a roux of butter and flour, then milk. So to veganize this recipe, I am using a plant based butter by Earth Balance and my unsweetened cashew milk to replace the butter and milk components. For the flour, I’m using tapioca starch for a gluten free option that will still be very effective in thickening my sauce.
So, now ready for the best part?
This recipe eliminates so many steps! That’s right. No need to make a roux and then add your milk. Just toss all your ingredients into a blender and process until smooth. Then pour your sauce into a small pot and cook over medium heat for about 10 minutes while whisking consistently. That’s it!
