You can never go wrong with potatoes, and this simple dish is perfect for all sorts of eaters.
It’s naturally vegan and vegetarian, gluten-free, and allergen-friendly.
This dish is inspired by my air-fried home fries, but this time, using thinly sliced potatoes.

Ingredients + Substitutions
Here’s what you’ll need to make this air fryer potatoes and onions recipe.
- Potatoes: I chose russet potatoes for this one, but other varieties (like Yukon gold potatoes or red potatoes) work too. You’ll need 1 pound, or approx. 3 small/medium or 2 large potatoes. I keep the skins on, but if you prefer peeling them, that works too.
- Onions: I like yellow onions, but other varieties also work. Keep them sliced thicker so they don’t burn while the potatoes are cooking.
- Broth: Use broth to keep the recipe virtually fat-free, or substitute with oil if you prefer.
- Spices: The original recipe calls for garlic powder, oregano, salt, and pepper. But check out our other variations below to spice things up.
Instructions
(This is a summary with step by step photos, full recipe measurements and instructions are in the recipe card below.)
Add the sliced potatoes, onions, broth, and spices to a mixing bowl and toss well to evenly coat.
Transfer to your air fryer basket and air fry until fork tender and desired doneness is reached.
Serve immediately with a sprinkle of fresh herbs if you’d like and enjoy.

Equipment
We use a Ninja Foodi 8 quart but any model of fryer will work for this recipe, including toaster oven styles.
Just note that different models will cook at different speeds, so always check on your food while air frying.
Storage
These air-fried potatoes and onions taste best when freshly made but you may store leftovers in an airtight container in the fridge for 2-3 days and reheat in your fryer, oven, or toaster oven.
I don’t recommend freezing.
Expert Tips
- Cut your potatoes as evenly as possible for even cooking and crispiness.
- The air frying model and potato thickness will determine cook time, so watch carefully toward the end of cooking.
- For crispier potatoes, you may use a good quality oil such as avocado oil, instead of broth, but this will increase the calories and fat. (I don’t recommend cooking with olive oil due to its low smoke point.)
