Scrub and slice the potatoes very thin, using a mandolin or another slicing tool, approx. ⅛" thick. Keep the onions sliced thicker since they cook faster.
Mix the sliced potatoes, onions, broth, and seasoning in a large bowl until evenly coated. Then transfer everything to your fryer basket.
Air fry the potatoes and onions at 400℉/204℃ for approx. 20 minutes, and stir or shake the basket every 5 minutes, until the desired doneness is reached. Serve hot with freshly chopped parsley or basil if you'd like.
Notes
Cut your potatoes as evenly as possible for even cooking and crispiness.
The air frying model and potato thickness will determine cook time, so watch carefully toward the end of cooking.
For crispier potatoes, you may use a good quality oil such as avocado oil, instead of broth, but this will increase the calories and fat. (I don’t recommend cooking with olive oil due to its low smoke point.)
