Today is a special day my friends! I’ve teamed up with some fellow bloggers for my first ever roundup party, a PEAR PARTY to be exact! Not only are pears in season right now, but they are packed in Vitamins C & K. In fact, pears have numerous health benefits, including aiding in digestion. So, as I was saying, I teamed up with some amazing food bloggers and we chose to each make recipes including pears. So I picked up a basket of Ontario grown fresh pears at the supermarket, and came up with this AMAZING vegan cold pear soup.
Wait a minute…
I know what you’re thinking…pear…soup?? Cold soup?? Cold pear soup?
Yup, my husband had the same reaction, until he tasted it! First we tried it warm as soon as it was ready, and even he admitted, it was pretty good! But then because of mom life, a screaming baby and toddler, bath time, bed time, etc, we didn’t actually sit down to take another bite until about 30 minutes later. Well, that was meant to be! This soup tastes AMAZING served cold. We couldn’t believe how much better the sweet and savoury flavours combined with each other once cooled down to room temperature. Then my husband gave me his famous line (“you can make this again”) that he tells me whenever he likes one of my creations. Success!!
Using in season fruits or vegetables always make for a delicious treat. You just can’t beat fresh, ripe produce. I served my pear soup garnished with green onion for a savoury bite to balance the sweetness from the pears. Next time, I may try serving my cold pear soup with some chili flakes for a sweet and spicy combo!
