These are naturally sweetened, vegan, gluten-free, and protein-dense like my strawberry, blueberry, lemon, chocolate almond, peanut butter, and double chocolate bliss balls.

Ingredients + Substitutions
Here’s all you’ll need to make these irresistible salted caramel bliss balls.
- Macadamia nuts: Choose raw or dry roasted, but make sure there is no added oil in your nuts. You may also make these balls with raw cashews or blanched almonds with similar results.
- Dates: Use Medjool dates and remove their pits, or choose pitted dates.
- Vanilla + salt: For added flavour and highly recommended so do not skip.

Add everything to your food processor bowl.
Then process until combined without overprocessing.
Roll the batter into bite-sized balls and you may optionally roll them into shredded coconut if you’d like.
Where’s the caramel?
The sweetness of Medjool dates combined with sea salt give this perfect snack its salted caramel flavour but without the added sweetener!
Equipment
I use thisย Cusinart food processorย to make these energy balls.
You MAY use aย high-powered blenderย if you don't have a food processor. However, removing the mixture from a food processor is easier, without wasting any of its deliciousness.
Storage
Keep your energy bites at room temperature for 2-3 days, or in the refrigerator for up to 1 week.
To freeze, use a freezer-safe airtight container and keep them frozen for up to 3 months.
Expert Tips
- If your dates are very dry, soak them in hot water for 10-15 minutes, and then drain them before adding them to your food processor. This will help soften them and make them easier to process.
- Use raw macadamia nuts OR dry roasted, with or without salt. However, if the nuts are salted, halve the added salt.
- Don't overprocess the mixture. These taste best with a little texture; process until combined without overdoing it.

- 1 cup medjool dates packed
- 1 cup macadamia nuts raw or dry roasted
- 1 teaspoon pure vanilla extract
- ยผ teaspoon sea salt reduce if using salted macadamia nuts
- desiccated coconut optional, for rolling
Instructions
- Add all 4 ingredients to your food processor and process until combined and you have an even consistency, without overprocessing. (Some texture is nice.)
- Scoop the batter and roll it into bite-sized balls, placing each one on a flat plate or baking sheet. You should get around 18 balls depending their size.
- Optional: Roll some or all of the balls into dessicated coconut.
