Wash your strawberries and blot them dry to remove any excess moisture. Then use a strawberry huller or sharp knife to hull/remove the stems.
Slice the berries as evenly as possible, approx. ⅛ inch in thickness. Then arrange them in your air frying basket in a single layer, without overlapping.
Air fry or use the dehydrate function (depending on your model) at 190℉/88℃ for 60-90 minutes. (Time will vary according to the thickness of your slices and the air frying model you have.)
Start checking on your strawberries at the 45-minute mark, and flip them. Then continue checking on them in 15-minute intervals until they are fully dried to the touch.
Oven Instructions
Preheat your oven to 200℉/93℃ and line a baking sheet with parchment paper.

Slice the berries as evenly as possible, approx. ⅛ inch in thickness. Then arrange them on your baking sheet in a single layer, without overlapping.
Bake for 90 minutes, and then peel the slices from the parchment paper and flip them. Continue baking for another 30-60 minutes until completely dried. (The thickness of the slices will determine how long they take to fully dry.)
Notes
Thick slices will take longer to dry out vs. thin slices. Do your best to cut the berries with uniform thickness for even cooking times.
Remove thinner pieces once done and continue cooking any thicker pieces until each slice is dehydrated.
I've made these with and without lining the air fryer basket with parchment paper. Both options work fine, but
