Add everything to your food processor, starting with 2 tablespoons of water. Process until broken down and you have a sticky, well combined mixture. Add more water if needed.
Scoop the batter using a small cookie scoop and roll it into a ball. Place each lemon bliss ball on a plate, baking sheet, or sheet of parchment paper. Repeat with the remaining batter. You will get around 22 energy balls.
Optional: Roll each ball with more shredded coconut using a shallow dish.
Notes
Don't overprocess the mixture. These lemon balls taste best with a little texture.
Zest the lemon before juicing it! And use fresh lemon juice for the best results.
Store the balls airtight in your fridge for up to 5 days, or freeze them for up to 3 months.
