This beautiful beet hummus is a perfect appetizer with veggies & crackers OR a great burger topping! Its vibrant colour & delicious flavour cannot be beat!

small beets
peeled & quartered

can chickpeas
drained & rinsed

cloves
garlic
peeled

tablespoons
balsamic vinegar

tablespoons
sesame seeds

tablespoons
lemon juice

water
plus 1-2 more tablespoons if needed for thinner consistency

teaspoon
sea salt
Instructions
Add the beets to a small sauce pan covered in water and bring to a boil, cooking until fork tender, approx 20 minutes.
Add the beets and all remaining ingredients to a food processor, and process until combined, stopping to scrape down the sides as needed.
Serve with pita, veggies, or crackers, enjoy!
Notes
Makes approx. 2 cups.
Store leftovers in an airtight container in the fridge for up to 5 days.
