Add the peanuts and optional sea salt if using to your Vitamix. Blend on high, using your tamper to push the peanuts down while blending, until a smooth consistency is reached. The peanut will quickly go from whole peanuts, to ground up pieces to creamy peanut butter.
Store in a clean sealed jar or container.
To make peanut butter in the Vitamix, don't use less than 2 cups of peanuts. You'll need some volume for it to blend nicely.If you want to make more than 4 cups at a time, I suggest multiple batches.If using salted peanuts, skip the additional sea salt.I've kept my peanut butter in a sealed jar at room temperature for up to 2 weeks. You may refrigerate for longer but it may harden slightly. Flavour will not be affected.
