Pecan Butter Cookies [V+GF+Oil Free]
These pecan butter cookies are absolutely drool worthy! You will never guess that they're oil free, gluten free and vegan!

Prepare your flax egg and set aside. Then preheat your oven to 350 degrees F and line a baking tray with parchment paper.
In a medium sized bowl, combine all your ingredients and mix well. Then, using a tablespoon, drop your cookie batter on your tray, leaving plenty of space in between as they will spread during baking. Bake for 10-12 minutes, until golden.
Then remove from the oven and cool at room temperature for at least 10 minutes to allow the cookies to set. Enjoy!
