White Bean Cabbage Salad w/ Avocado Orange Dressing
Creamy and velvety avocado orange dressing covers this delicious white bean cabbage salad for a nutritious, wholesome meal.

For the Salad
- 2 cups red cabbage shredded
- 1 cup baby spinach
- 1 small cucumber diced
- 2 green onions thinly sliced
- 1 carrot shredded
- 1/2 cup cilantro chopped (or parsley)
- 1 cup white beans cooked or canned
- 1 tbsp chia seeds
- 1 cup heirloom cherry tomatoes
For the Dressing
- 1 avocado peeled & pitted
- 1 orange peeled
- 2 tbsp maple syrup
- 3 tbsp water
Combine all the salad ingredients to a serving dish and mix to combine. Then sprinkle the chia seeds over top and garnish with the cherry tomatoes.
To make the dressing, add all 4 dressing ingredients to a small blender (I used my magic bullet) and process until smooth and creamy. Serve with your salad and enjoy!
