Ingredients

For the Salad

  • 2 cups baby spinach
  • 1 cucumber diced
  • 1.5 cups quinoa cooked
  • 1 cup purple cabbage shredded
  • 1/2 cup chopped almonds soaked in boiling water 10 mins then drained
  • 1 can black beans drained & rinsed
  • 1 cup cilantro chopped (or parsley)
  • 5 strawberries sliced

For the Dressing

  • 1 cup fresh strawberries sliced
  • 1 tbsp white wine vinegar
  • 1/4 cup fresh basil leaves
  • 2-4 tbsp water

Instructions

For the Salad

  • Layer all your ingredients in the order listed in a serving dish or bowl.

For the Dressing

  • Add all the ingredients to your blender, starting with 2 tablespoons of the water and process until pureed and smooth. Add more water until desired consistency is achieved. Drizzle over your salad or serve separately so everyone can dress their own.
