Citrus Spinach Quinoa Salad with Orange Vinaigrette

Delicious and nutritious spinach quinoa salad is drizzled in a sweet orange, oil free vinaigrette made in 5 minutes flat!

Ingredients

For the Salad

  • 2 cups spinach
  • 1.5 cups cooked quinoa
  • 1 cup walnuts soaked for 1 hour & drained (optional, you may skip soaking if you prefer a crunchier texture)
  • 1 15 oz can lentils drained & rinsed
  • 1 carrot shredded
  • 1 tbsp chia seeds
  • 1 cup cilantro chopped
  • 3 tangerines peeled & wedges divided

For the Dressing

  • 1 large orange zested & juiced
  • 2 tbsp white wine vinegar
  • 2 tbsp maple syrup
  • 1 clove garlic peeled (mince if you do not have a high powered blender)
  • 1/4 tsp sea salt
  • 1/4 tsp black pepper

Instructions

For the Salad

  • In a large serving dish, layer the ingredients in the order listed. Refrigerate until ready to eat.

For the Dressing

  • Add all ingredients to a high powered blender and process until creamy. Refrigerate 1 hour to chill before using. Then drizzle your salad with the dressing, or serve separately and allow your guests to dress their own salad.
