Pumpkin Black Bean Burgers
Pumpkin black bean burgers are simple and tasty! No precooking or chopping required. Just combine all your ingredients, form your patties and bake!

Servings: 4 burgers
- 1 13.5 oz cans black beans drained & rinsed (approx 1.5 cups)
- 1 cup pumpkin puree
- 1/2 tsp garlic powder
- 1/2 tsp cumin
- 1 tsp smoked paprika or sweet
- 2 tbsp tamari or soy sauce if not avoiding gluten
- 2/3 cup quick cooking steel cut oats or rolled oats
Preheat your oven to 375 degrees F and line a baking tray with parchment paper.
Add all the patty ingredients to a food processor and process until well combined, stopping to scrape down the sides if needed. Do not over process, a few chunky pieces is fine.
Divide your mixture into 4 patties and bake for 20-25 minutes. Do not overcook or they will get dry. The burgers are ready when they start to look cracked around the edges.
Remove from the oven and let cool at room temperature for a few minutes before serving.
Top your burgers with lettuce, tomato, pickles, red onion or Guacamole if desired.
If avoiding fat, skip the mayo and use ketchup or mustard instead.
