Pumpkin Black Bean Burgers

Pumpkin black bean burgers are simple and tasty! No precooking or chopping required. Just combine all your ingredients, form your patties and bake!

Equipment

Ingredients

  • 1 13.5 oz cans black beans drained & rinsed (approx 1.5 cups)
  • 1 cup pumpkin puree
  • 1/2 tsp garlic powder
  • 1/2 tsp cumin
  • 1 tsp smoked paprika or sweet
  • 2 tbsp tamari or soy sauce if not avoiding gluten
  • 2/3 cup quick cooking steel cut oats or rolled oats

Spicy Mayo (optional)

Instructions

  • Preheat your oven to 375 degrees F and line a baking tray with parchment paper.
  • Add all the patty ingredients to a food processor and process until well combined, stopping to scrape down the sides if needed. Do not over process, a few chunky pieces is fine.
  • Divide your mixture into 4 patties and bake for 20-25 minutes. Do not overcook or they will get dry. The burgers are ready when they start to look cracked around the edges.
  • Remove from the oven and let cool at room temperature for a few minutes before serving.
  • Top your burgers with lettuce, tomato, pickles, red onion or Guacamole if desired.

Notes

If avoiding fat, skip the mayo and use ketchup or mustard instead.
