Process everything but the vital wheat gluten, then slowly add to your food processor.

Knead the mixture to combine. Shape and wrap in cheesecloth or foil. Place roast in your steamer or Instant Pot.

As the roast is steaming, make the smoky maple glaze. Then remove the roast and transfer to a cutting board.

Score the ham, cutting on a diagonal in both directions. Place in oven safe dish and glaze. Bake + baste as needed.

Let cool slightly. Then slice and serve!
