It’s January, and that means, like myself, most people are trying to shed a few holiday pounds! Hope you’re looking for healthy salads because I’ll be having a quite a few coming your way over the next couple of weeks. This spinach quinoa salad is fresh and tangy, accompanied by an oil free, sweet orange vinaigrette. Perfect for lunch or dinner!
This spinach quinoa salad is easy to prepare, just layer all your ingredients in a serving dish. For the vinaigrette, just toss all the dressing ingredients into your Vitamix (or other high powered blender) and process until smooth and creamy. I love simple recipes! Especially one that is healthy and delicious. This salad is really a perfectly wholesome meal that is loaded with protein. It contains a healthy dose of quinoa, lentils AND walnuts!
This spinach quinoa salad and its dressing are oil free, vegan, gluten free, and peanut free! A great choice for many eating preferences and diets. If you are allergic to all tree nuts, just skip the walnuts!
Once you’ve layered all your salad ingredients and chilled the vinaigrette, drizzle the salad with your dressing and serve immediately. Or serve the dressing separately so your guests can add as much or as little dressing as they like on their portion.
