These delicious lemon coconut bliss balls are grain-free, gluten-free, dairy-free, raw vegan, and make the perfect snack.
A few weeks ago I shared my recipe for chocolate almond balls on the blog, and I got a few requests for more flavours.
So this time, I’ve got a lemony fresh energy bites recipe for you and I think you’ll love it. 😉

Ingredients + Substitutions
Here’s everything you’ll need to make this fantastic lemon bliss balls recipe.
- Dates: Choose pitted dates, or use Medjool dates and remove the pits.
- Raw cashews: Use RAW cashews that are unroasted, with no salt and no oil for maximum health benefits. For cashew allergies, you may sub with other nuts such as blanched almonds, or macadamia nuts with similar results.
- Lemon: Use fresh lemons here. You’ll need about 1 large lemon for the zest and juice. Make sure to zest the lemon before juicing.
- Coconut: Choose unsweetened coconut to keep these lemon energy balls refined sugar-free.
Instructions

Add all the ingredients to your food processor. (photo 1)
Process until combined and broken down. (photo 2)
Scoop the mixture and roll it into balls. (photo 3)
Optional: Roll the balls into shredded coconut. (photo 4)
I like to roll approx. half the balls with extra coconut and leave the rest plain.
Equipment
I use this Cusinart food processor to make these lemon energy balls.
You MAY use a blender if you don’t have a food processor. However, I prefer these with some texture kept intact and it’s easier to transfer the mixture from a food processor.
Storage
Store your energy balls in a sealed container in your fridge for up to 5 days.
Or use an airtight freezer-safe container and freeze them for up to 3 months.

- Don’t overprocess the mixture. These lemon balls taste best with a little texture.
- Zest the lemon before juicing it! And use fresh lemon juice for the best results.

Ingredients
- 1 cup raw cashews
- ½ cup unsweetened shredded coconut plus more for rolling
- 1 cup pitted dates packed
- 1 tablespoon lemon zest from approx. 1 large lemon
- 2 tablespoons lemon juice
- 2-4 tablespoons water
Instructions
- Add everything to your food processor, starting with 2 tablespoons of water. Process until broken down and you have a sticky, well combined mixture. Add more water if needed.
- Scoop the batter using a small cookie scoop and roll it into a ball. Place each lemon bliss ball on a plate, baking sheet, or sheet of parchment paper. Repeat with the remaining batter. You will get around 22 energy balls.
- Optional: Roll each ball with more shredded coconut using a shallow dish.
