Easy Turkey Chili [Gluten Free]

We just celebrated Thanksgiving here in Canada yesterday. So, naturally, this means there’s a ton of leftover turkey! (Among other leftovers.) My family typically cooks up a storm on any occasion, in the event we’ll be getting any unexpected company. I think being of Italian descent makes overcooking practically a requirement. Thanksgiving is no different. So, there was a big bird! There were all the usual fixings you’d expect on Thanksgiving…mashed potatoes, stuffing, creamy squash and pumpkin soup. Oh, and of course, a green salad to decorate the table, which no one ate, haha! There were no extra guests. However, there is definitely extra turkey! So, today I decided to re-purpose the leftovers into my husbands favourite dish, chili. EASY turkey chili, that is.

This easy turkey chili came together SO quickly!

…and my hubby gives it two thumbs up!! 🙂 This chili was not only quick and easy to make, but oh so comforting. I love making healthy comfort food. It’s satisfying, without the guilt! I think the only thing that could make this better is some warm crusty garlic bread on the side. YUM.

If you love chili you need to try this! If you also like the idea of a lightened up version, don’t wait for your thanksgiving leftovers. Just sauté some ground turkey with the diced onions until no longer pink. Then add the remaining ingredients and simmer as usual. There you have it! Turkey chili that is easy to make and absolutely scrumptious!

  • 1 tsp cooking oil I used grape seed
  • 1 yellow onion diced
  • 2 cups shredded cooked turkey I used my Thanksgiving leftovers (If you do not have cooked turkey handy, you may use ground turkey and saute until no longer pink)
  • 3 cups black beans cooked or canned
  • 1.5 cups low sodium vegetable broth
  • 4 cups homemade tomato sauce or store bought
  • 4 tbsp tomato paste
  • 1 tsp garlic powder
  • 1 tsp chili powder
  • 1/2 tsp cayenne pepper
  • 1/2 tsp thyme
  • 1/4 tsp sage
  • salt + pepper to taste

  • In a large saucepan or pot, add your oil and diced onions and sauté for 2-3 minutes. Then add the turkey and stir to coat, cooking for 1 more minute.
