I love pancakes, and so do my entire family. Needless to say, we make pancakes often! You may have noticed from the variety of pancake recipes I’ve shared so far. So as I was saying. How to include pancakes into a well balanced, healthy lifestyle? EASY! Just add some veggies and use natural sweeteners. In this case, very ripe banana and a touch of maple syrup. Hello beautiful banana spinach pancakes! These pancakes are free from refined sugar, making them a healthier choice that you can feel good about. Now you can have your pancakes and eat them too! That’s a saying right?
To prepare these easy pancakes, toss all your ingredients into a high powered blender. I use my Vitamix. Then process until smooth, and heat your non stick griddle until very hot. Pour the batter directly from your blender spout to cook your pancakes.
Cook them for about 4-5 minutes on the first side. You will see several bubbles form. Then flip them and cook the other side until golden brown, about 3-5 more minutes.
Enjoy these scrumptious pancakes with fresh fruit and maple syrup. Or you may even enjoy plain! They’re that good! 🙂
