I love a good coleslaw, but don’t especially love the ton of mayo that typically comes along with it. So here I’ve made a healthy coleslaw salad with a spin on traditional versions. No mayonnaise here! Just a healthy, protein dense, homemade peanut dressing, that also happens to be oil free, plant based, and gluten free! The crunchy cabbage combines perfectly with the peanuty, spicy, velvety dressing. I will definitely be making this one, again and again!
To make this salad, I use my Veggie Bullet shredder attachment, but a food processor should also do the trick! Just shred all your veggies (except the cilantro) and combine them in a large bowl. Finely chop your cilantro and add to the bowl. Or you may sub for parsley instead. Some people HATE cilantro and say it tastes like soap??? Has anyone else heard of this? I haven’t always liked cilantro, it actually took some time to grow on me. But now I love it, and just can’t get enough. So for those of you who don’t like it, just swap for parsley instead!
Once your coleslaw salad components are ready, make your dressing in another small bowl. Add all the dressing ingredients and mix well. I use a fork to help the peanut butter break down and blend well into the other ingredients. This sauce is so flavourful, and can definitely be used in a variety of other dishes as well!
When ready to serve, garnish the salad with lime wedges and more cilantro (or parsley) if desired. Serve the dressing on the side, or pour over top the salad and mix well. Then dig in!
